SEARED SEAFOOD TAGLIATELLE WITH MACADAMIAS AND SALSA VERDE

Ingredients

  • 500g tagliatelle or preferred pasta salsa verde
  • 1 cup chopped coriander
  • 1/2 cup chopped parsley
  • 1 tblsp capers
  • 1/4 cup macadamia or olive oil
  • 2 tblsp lime juice or wine vinegar
  • 2 tblsp chopped macadamias
  • freshly ground pepper
  • SEAFOOD:
  • 1 tblsp macadamia oil
  • 600g mixed raw seafood eg prawns, scallops, salmon, ocean trout
  • 1/2 cup macadamia halves and wholes

Method

Bring a large saucepan of water to the boil and cook the pasta according to packet directions. Meanwhile, combine all the salsa verde ingredients in a blender and, using the pulse button, process to a coarse puree. Heat a non stick pan or grill pan to high, add the seafood and macadamias and cook, stirring occasionally, for 2-3 minutes or until seafood is just cooked - fish should still be pink inside. To serve, drain the pasta and toss through a little of the salsa verde. Place pasta on plates, top with seafood and macadamias, and spoon over the remaining salsa verde. Serves 4-5
